If some food was outdated but looked 'Okay' then it stayed on the line but as soon as there is a complaint from guests then it was your fault it was not done correctly. The management was more focused on needing to perform their own tasks rather than handle the kitchen staffs problems. I worked evenings and the most frustrating thing to find when coming in was a mess that the employee waiting for me to get in was going to have me finish which to me was not okay by any standards.
You'd see people getting away with basic food safety procedures like not properly wrapping things up or things not meeting temp and most if not all people just write a temp just to have it in there and it's not written down at all. You were expected to act and be responsible however it was frustratingly not what you'd expect out of a casino ran kitchen. Working at the Tribes Eagle Buffet was like an action show.
